Rhode Island Recipes: Creative, Healthy Cooking With Iconic Local Foods

What happens when two food bloggers get into the kitchen with some favorite culinary souvenirs from their home state? They whip up a cookbook, of course! Rhode Island Recipes: Creative, Healthy Cooking With Iconic Local Foods, by Lydia Walshin and myself (Jennifer Leal), includes 30 family-friendly dishes – appetizers, mains, sides and, yes, a few desserts -- that feature products from 17 Rhode Island companies.

Our goal with this cookbook, is to celebrate the best of Rhode Island’s iconic foods including favorite culinary souvenirs like Del’s Lemonade, Dave’s Coffee Syrup, Kenyon Corn Meal and all things Wicked Natural.

In Rhode Island Recipes, we put a new spin on the sauces, condiments and mixes many Rhode Islanders stock in their own pantries and proudly give as gifts whenever they travel. These foods, created here in the Ocean State, are the same ones that ex-pats request in packages from home.

The cookbook features easy recipes for ingredients typically used in some of Rhode Island’s famous specialties like jonnycakes, stuffies, coffee cabinets and our state drink, coffee milk. Recipes, focused on healthy ingredients combined with Rhode Island-made products, include:

  • Baked Clam and Corn Cake Fritters
  • Weiner Spice Meatball Whole Wheat Pizza
  • 'Buddy' Lasagne
  • Coffee Syrup BBQ Pulled Pork
  • Smoky Spicy Cole Slaw
  • Chickpea and Roasted Pumpkin Seed Salad
  • Lemon Cake with Lemon(ade) Glaze
  • Whole Wheat Maple Syrup Baked Doughnuts

We included full-color photos of every recipe and in case you don’t have the iconic products, we included ideas for substitutions.
