Now that spring appears to be here to stay, we are all anxiously awaiting the arrival of the fresh produce that we miss buying from local farms or growing in our own backyards.
One of my family’s favorite springtime vegetables is Asparagus. Naturally, you can go old school and simply steam, season and enjoy or even top with a little butter, but if you want some fresh ideas, consider these:
Asparagus topped with cheese, almonds and drizzle with vinaigrette is sure to make anyone's eyes open wide.
An Asparagus Frittata is one way that asparagus can join you at the breakfast table. Plus, you can toss in any leftover veggie companions and top with any cheese for a morning delight.
The first time a friend brought over this Asparagus Gruyere Tart to my house, I barely shared any with the other guests. It is that good so please make it as soon as you can. In fact, make two so there is plenty to share.
